Garbanzo Guacamole Appetizer

Garbanzo Guacamole:

Let me start with this: it is hard to make a photo of guacamole appealing!   With that said, this garbanzo guacamole appetizer is a really great appetizer or snack! I  continue to read how  adding garbanzo beans/chickpeas or white northern beans  to guacamole is  a great way to add bulk and offset the calories of the  avocados.  I have never been a fan of garbanzo  beans or  chickpeas, but thought I would try it since I had garbanzo beans on hand and 2 very ripe avocados.

Garbanzo Guacamole Appetizer

Stretching the calories of the traditional guacamole appetizer with Garbanzo, Chickpeas or White Northern beans!
Ingredients
  • 2 avocados (peeled)
  • 1 can of a white bean (Garbanzo, White Northern or Chickpeas), drained & rinsed
  • ½ red onion, chopped
  • 1-2 Roma tomatoes, chopped
  • 1-2 Tablespoons Olive Oil
  • 2 Tablespoons lemon juice
  • Kosher salt and pepper to taste
Instructions
  1. Blend beans and avocados in food processor
  2. Transfer bowl, add onion and tomatoes
  3. Add remaining ingredients and fold gently.
  4. Chill before serving (if you can wait that long)

I loved it! I ate it for lunch over the weekend for a quick lunch!  This was not a “Fam Favorite,” but I loved it!
