Breakfast is one of the top three meals of each day. #momhumor And, yet I fail as a mom when my son grabs a bowl of cereal..for the 5th morning that week. Or, he leaves the house with nothing in his teenage belly. #momfail He loves scrambled eggs (and so do our dogs), but they are hard to eat on the run when my son is hurrying out the door. I tried the scrambled egg muffins, but a reheated egg muffin just doesn’t taste as good as fresh out of the oven egg muffins.
And, my son’s breakfast menu was about to make a change for the better. While steering my cart away from the baked goods in the bakery section at Kroger I found pre-packaged Naan (flatbread). Now, I know flatbreads have been around for centuries, but I never considered it for scrambled eggs to go until then. #cuethemusic
I think it was the toaster reference that caught my attention. Because a toaster means an appliance is doing the heavy lifting for this breakfast.
The real test was when my son rumbled down the stairs to grab his lunch and say his goodbyes. I greeted him with a plate of scrambled eggs tucked inside a toasted flatbread pocket. He had a few minutes as he waited for his carpool (yes he created a high school carpool to save on gas and to get a break from his 25-minute commute). And, he ate the entire pocket. #mommoment
