Breakfast is a big deal at our house on Saturdays and Sundays. And, most Friday nights include a sleepover with my younger son and his friends. How can those guys sleep on the floor? Except my son shared a little secret; after his two friends fall asleep under comforters and pillows my son sneaks back to his room to sleep in his bed.

I giggled when he told me and told him it sounding like he was cheating. Like, the thing about a sleepover is everyone has to suffer from sleeping on the floor with a foam decorative pillow from the couch. That’s what sleepovers are all about, right? And breakfast is the best way to wrap up a sleepover.
So after a late night sleepover, I whipped up some pancake batter and decided to create a twist on a classic breakfast item. I grabbed a muffin pan, prepped it with cooking spray and dropped the pancake batter into each cup. And, this is how I learned to make pancake muffins.
These pancake muffins bake in about -10 minutes and just serve with a side of syrup! I added chocolate chips to this batch. The boys inhaled a dozen pancake muffins in minutes. This is all I need… a meal that is loved.
But the new breakfast gets better. The next morning I got a text from one of the boy’s mom telling me her son loved the pancakes.
These pancake muffins bake in about 8-10 minutes. These would be perfect to serve at a brunch too. And, the best part of these pancake muffins is they are so easy… easy like …Sunday mornings…
