This crock pot breakfast is perfect for overnight guests. On the weekends our house usually has a 1/2 dozen teenage boys sleeping on the floor in the basement. This crock pot breakfast is great because it feeds a crowd. I love it because it’s anything goes recipe where I can add different ingredients and make substitutions. I almost have eggs and turkey bacon in the refrigerator. And, I keep a bag of shredded hash browns in the freezer. These are the basic ingredienets for an easy, casual crock pot breakfast.
For reference, I usually use a dozen eggs, 3/4 bag frozen hash browns and 2 cups shredded cheddar cheese. For an extra kick I add a can of diced tomatoes or salsa.
Here’s how it looks in the crock pot when it is ready to serve. I usually layer the crock pot with hash browns, followed by the eggs and then just layer the remaining ingredients in no particular order. The beauty of this recipe is it serves a crowd and it makes a great breakfast, brunch, or breakfast for dinner meal. My boys like to reheat it for leftovers too.
This breakfast tends to cook fairly fast in the crock pot. Depending on the crock pot settings, it can cook overnight or set it on a higher setting and start it early in the morning.
