As I recover from this blog meltdown event I asked for a few guest contributors to help while I rebuild a blog from scratch. Katherine from Katherine’s Corner was gracious (as always) and despite her own loss in her family she jumped on board to help. It means so much to me to have a community of women, who have never met face to face, to help other women build their blogs and brands. Katherine’s Herb and Bacon Mushrooms sound amazing. Laura is such a sweetie. I appreciate her bloggy friendship and the invitation to share with you today. This is an easy recipe and the perfect side dish for pork right off of the grill ( or broiler). It’s also a nice compliment to your favorite pork chop recipe. Served on the side or on top of the pork chop, it is really tasty. We love mushrooms and I make them often and in a variety of ways. These herb and bacon mushrooms are fantastic for breakfast too, serve with egg and toast. I have also made these and spooned them over brown or wild rice. Try it on its own too. It’s great for lunch, use Portobello mushrooms and serve with a piece of crusty bread! So many menu options with these mushrooms.
What You Need
3-4 Strips bacon (minced) I use nitrate free
2 Tbsp. Canola oil
1 Lb. Fresh mushrooms sliced (cleaned and stems trimmed)
3 Cloves garlic (crushed)
1/2 tsp. Crushed rosemary (dry)
1/2 tsp. Thyme (dry)
1 tsp. White pepper (ground)
1/4 Cup fresh parsley (finely chopped)
Before You Start- Brush your mushrooms clean with a tea towel, cheese cloth or paper towel. Do not clean in water.
Lets Make It! Add bacon and oil to skillet and cook over medium heat until bacon is about half cooked through ( about 5-8 minutes). Add mushrooms and remaining ingredients and saute’ all together stirring regularly to insure bacon is well cooked and mushrooms have softened.
*Katies Tid Bits – The type of bacon you use hickory, maple, etc. changes the taste a bit. Try different types of bacon to find your favorite.
