HEDGEHOGS are trending this fall! Yay! SO here is my contribution to push the trend forward. Hedgehog cookies!
I found this cute Hedgehog cookie recipe in the Taste of Home Kid Approved Cookbook.
The ingredient list is below. You may recognize this recipe from my first attempt at these little guys. Instead of tossing them out I turned them upside down and turned them into acorn cookies. See my acorn cookies post HERE. Here is a picture to illustrate how to shape the hedgehogs once you create your dough. My first batch failed because my dough balls were too small and the hedgehog deflated in the oven. I suggest shaping a generous size (approximately a golf ball size) dough ball and then pinch one end. Don’t expect the cookies to come out looking like a hedgehog! It really is the frosting, sprinkles and chips that create the hedgehog.
Next steps: Melt the chocolate chips in the microwave. Tip: I spray the inside of a glass measuring cup with cooking spray. Heat and stir in 30 second increments. Spoon melted chocolate on opposite end of pinched face. I added the chocolate sprinkles once I finished the melted chocolate step. Here’s a closeup of his backside:
Finally, I used a toothpick to dab the melted chocolate onto the hedgehog and then added 2 chips for the eyes and nose! These were a hit at our house.
