When I saw this recipe over at Chef-in-Training I immediately saved it. It had 2 of my favorite words Coconut and Sheet Cake. Something about the word “sheet” sounds easier. And this Coconut Cake did not disappoint in the taste or easy categories!

My family devoured 1/2 this cake within the first hour of it “setting” on the counter. The added bonus- this cake was easy to cut into bar sizes which makes it a great dessert “bar” for parties or potlucks.
- 2 cups flour plus 2 Tablespoons flour
- 2 cups sugar ** I reduced to 1½ cups because of the sweet frosting**
- ½ cup butter
- 1 cup water
- ½ cup shortening
- ½ cup buttermilk
- ½ teaspoon baking soda
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon coconut extract
- ¼ cup shredded coconut ** I added a little more**
- Coconut Frosting:
- ½ cup butter
- 6 Tablespoons milk
- 3½ ups powdered sugar
- 1 teaspoon coconut extract
- In a large mixing bowl, measure flour and sugar and set aside
- In a medium saucepan combine: butter, water and shortening. Bring to boil.
- After mixture starts to boil add it to the flour and sugar and mix.
- Add buttermilk, baking soda, eggs and vanilla. Stir in coconut.
- Pour into greased 18x13x1 inch cookie sheet.
- Bake at 400 degrees for 20 minutes.
- Coconut Frosting
- Bring butter and milk to boil. Stir in powered sugar and coconut extract until smooth.
- After cake has cooked, remove from oven and poke holes with a fork. Pour frosting evenly on the top.
- Sprinkle top of cake with coconut .
