This is the season of the pumpkin! This time of year pumpkin has the distinction of being a décor staple and a recipe staple. The pumpkin gets around in the fall! So it’s not like the pumpkin needed to be more popular but that is exactly what is about to happen. A pumpkin movement is in the works and Libby’s is a big part of this push. On my tri weekly trip to the grocery store I grabbed a few cans of Libby’s pumpkins because they were on sale. I noticed something on the top of the cans but assumed it was a fancy recipe that included ingredients I would never have in my refrigerator or panty.
When I unloaded my haul of stuff I got a chance to read the Libby’s lid with suggestions on ways to substitute pumpkin for popular baking ingredients. I thought it was a clever way to market their brand. In the time it took to open the can I had both the suggestions and measurements on how to substitute pumpkin for butter, oil and eggs for certain recipes. Pay attention all you packaging managers.
I am a late- to- the- party- pumpkin enthusiast. In the past, my pumpkin palate was limited to muffins, breads and the annual pumpkin pie at Thanksgiving. In all my years of trying alternatives to butter and oil, pumpkin never came to mind. The texture and look remind of orange chunky applesauce. And, in my house it’s not like the family is waiting to lick the pumpkin smothered spatula. Speaking of spatulas check out my favorites-makes a great stocking stuffer.
I think it’s a genius idea to put the substitution ideas on the lid. For someone like me who has recipe-lexia this is a genius idea. I bought an extra can to remind me of the possibilities of beyond a muffin. I have heard rumors of pumpkin popping up in the classic macaroni and cheese….
On a side note my dogs love pumpkin so I fill their Kongs with pumpkin and freeze. Just make sure not to let them enjoy this frozen treat on a rug or couch! That was an expensive lesson.
