These cookies were not intended to be acorn cookies. But, when my hedgehog cookies were an epic fail (is the word epic still trending?), I decided to make them into acorn cookies!
Why not? I got the original recipe from Taste of Home Kid Approved Cookbook:
I think they turned out great and perfect for autumn!
Here is the Printable Recipe for the Acorn/Hedgehog Cookies:
ACORN COOKIES: 1/3 cup butter, softened, 1/4 cup powdered sugar, 1/2 teaspoon vanilla, 2/3 cup flour, 2/3 cup ground pecans, dash of salt, 1/2 cup bittersweet chocolate baking chips (I used semi-sweet), 1/4 cup chocolate sprinkles.
Cream butter and powdered sugar. Add vanilla. Combine flour, pecans and salt, gradually add to creamed mixture. Shape 1 tablespoon of dough into a ball, pinch one end of ball to create bottom half of acorn. Place 2 inches apart on a greased baking sheet. Bake at 325 degrees for 12-15 minutes, remove and cool on wire rack. In a microwave, melt chocolate and stir until smooth. Spoon chocolate on the top, leaving the “bottom” uncovered. Immediately coat the melt chocolate with sprinkles.
