Garbanzo Guacamole:
Let me start with this: it is hard to make a photo of guacamole appealing! With that said, this garbanzo guacamole appetizer is a really great appetizer or snack! I continue to read how adding garbanzo beans/chickpeas or white northern beans to guacamole is a great way to add bulk and offset the calories of the avocados. I have never been a fan of garbanzo beans or chickpeas, but thought I would try it since I had garbanzo beans on hand and 2 very ripe avocados.
Recipe here:
- 2 avocados (peeled)
- 1 can of a white bean (Garbanzo, White Northern or Chickpeas), drained & rinsed
- ½ red onion, chopped
- 1-2 Roma tomatoes, chopped
- 1-2 Tablespoons Olive Oil
- 2 Tablespoons lemon juice
- Kosher salt and pepper to taste
- Blend beans and avocados in food processor
- Transfer bowl, add onion and tomatoes
- Add remaining ingredients and fold gently.
- Chill before serving (if you can wait that long)
I loved it! I ate it for lunch over the weekend for a quick lunch! This was not a “Fam Favorite,” but I loved it!
