Hi everyone- So excited to share this mini banana bread. It’s the perfect size for banana bread on the go. I purchased a Pampered Chef brownie pan in December (let’s call it a Christmas gift to myself). I have yet to use it for brownies, but I am loving the mini square shapes for breads. I love making banana and pumpkin breads for my family, but it’s not very friendly for a family on the run It falls apart in the wax paper or plastic bag where there are more crumbs than bread. Like I mentioned I found my pan at Pampered Chef, but I just saw one at Michael’s in the baking section. I may have seen them at Target too!
This is the perfect size to package for each family member as we head out the door. It’s makes a great treat for neighbors to let them know you appreciate them. Hmm.. I may have to make a few dozen for my neighbors who help teach our Bernese Mountain puppy, Chloe, her backyard is not 2 acres of backyards and open space! She tends to think her yard extends 5 houses in each direction. Scroll below for recipe.
- 2 CUPS FLOUR
- ¾ TEASPOON BAKING SODA
- 1 CUP SUGAR
- ¼ CUP BUTTER SOFTENED
- 2 EGGS
- 3 MASHED BANANAS
- ⅓ CUP PLAIN YOGURT
- 1 TEASPOON VANILLA
- MIX INGREDIENTS. BAKE AT 350. BAKING TIME NEEDS TO ADJUST BASED ON BAKING PAN OR BREAD PAN USED. FOR THE MINI PANS, START CHECKING AT 18-20 MINUTES.
