crockpot casserole
Today I am sharing a crockpot casserole recipe. This is my favorite crockpot recipe for the crazy days during the holidays. The recipe is flexible enough for breakfast, lunch or dinner during this time of year! Because this casserole is prepared and baked in a crockpot it is easy and flexible depending on schedules! It’s packed with protein, fresh vegetables and a little kick with RO*TEL tomatoes. Because it’s made in a crockpot I can drop the ingredients in and let it cook overnight or during the day depending on our early morning routine or after school activities. I like to serve this for brunches or large groups because the ingredients are easy and inexpensive. And, I can prepare it ahead and throw it in the crockpot the night before or first thing in the morning. The best part is my entire family loves this casserole. How often does that happen? Scroll below for the printable recipe. The one suggestion is to make sure to prep the crockpot with cooking spray. I learned this lesson the hard way.
With busy days and errand filled evenings, Walmart is where I purchased the RO*TEL tomatoes and fresh onions. Walmart makes it easy because I can grab ingredients and other essentials for the home. I grabbed the RO*TEL first in the pasta and sauce aisle:
The RO*TEL is conveniently located on the corner of the aisle, front and center. RO*TEL is a staple in my pantry so I always grab several cans. I add RO*TEL to everything! What I love about RO*TEL is the tomatoes are already diced and seasoned with green chilies! I must admit I was tempted to turn each can so they all faced forward. Yes, I am that girl:
I grabbed a bag of white onions and green onions for the Crockpot Casserole. The produce section was busy with shoppers and staff replenishing produce. The white onions are adjacent to the refrigerated produce:
I panicked when I didn’t see the green onions, but a Walmart staff member brought out huge box of green onions to restock! I grabbed this picture so you have a reference of where the green onions are located in the refrigerated produce. And, if you don’t see what you need make sure to ask.
I had the remaining ingredients on hand and was ready to go! Here are the ingredients pre-measured and ready to go for the crockpot:
I grabbed a can of Pam cooking spray for the crockpot! It makes cleanup so much easier. This time of year I stock up on Pam cooking spray because of all the baking and crockpot meals happening in the kitchen!
The printable recipe is below, but here are the ingredients and recipe for Crockpot Casserole. The ingredients can be easily adjusted depending on the size of the crowd. I typically use a dozen eggs, 3/4 cup milk, 1 1/2-2 cups cheese, 1/2-1 cup chopped bacon, 1/2 cup chopped white onion and green onion and 1 can of RO*TEL!
With ingredients ready to go and the crockpot on low I start to layer the hashbrowns, bacon, onions, cheese and RO*TEL tomatoes in two or three layers. I add one final layer of RO*TEL before adding the premixed eggs/milk combo. Here’s what it looks like in the crockpot before I added the eggs/milk mixture.
My crockpot cooks quickly so this is after four hours on high to medium in the crockpot. It’s an easy and yummy meal anytime! My entire family loves this because it has ingredients they all love, it is perfect for breakfast, lunch or dinner and it reheats well!

- 1 dozen eggs
- 1 cup milk
- 1 can RO*TEL tomatoes
- 1 package of has brown potatoes
- 1 pound of bacon (or sausage)
- ½ cup green onions and/or white onions ( chopped)
- 2 cups shredded cheddar cheese
- salt and pepper to taste
- Spray crockpot with cooking spray
- Layer hash browns, bacon, onions, RO*TEL and cheese in 2 or 3 layers.
- Beat the eggs, milk, salt & pepper and pour over the layers
- ***Cook in crockpot on low for 6-8 hours or until eggs are set and thoroughly cooked***
- Crockpot temps vary so adjust time accordingly.
