Today I am sharing eggs. I recently discovered hardboiled eggs make the perfect snack. A few years ago an egg was considered a treat; scrambled, a little cheese and bacon! A treat because in the last decade we were warned about the negative attributes of the egg: cholesterol. And, then I began reading labels. Labels with “low fat” and “no cholesterol” and oh … 15 ingredients I couldn’t stumble through and pronounce. And, then the more I read about a clean, unprocessed diet the more I wanted to look into it. Now, don’t get me wrong this girl can plow through a sleeve of Thin Mints in about four minutes. But I found the more I chose healthier options, the more I crave healthier options!
I recently switched to hormone free, free range eggs. Yes, I pay more, but it is the right thing to do. I love that this is a natural, wrapped snack for 65 calories. Where else can you find the convenience and the protein packed snack with no crazy ingredient list?! I boil a 1/2 dozen eggs on Sunday and store them in this cute little egg basket I found at HomeGoods. This way the boys (and I mean the older one) don’t confuse mom’s hardboiled eggs with the uncooked eggs in the original package.
