Almond Joy Cookie Recipe

Hi there- I found this Almond Joy cookie recipe on a friend’s post and knew I had to make these for the first week of school! These cookies are amazing! I read the recipe twice looking for the amount of Almond Joys before I realized the chocolate, coconut and almonds are the Almond Joy. And, these cookies will bring joy!

One of my kids gets migraines with milk chocolate. I accidentally dropped the chocolate chips into the batter before putting some of the batter aside, minus the chips. Love means picking out the chocolate chips!

Here is the recipe.  It calls for 5 cups of chocolate chips but I reduced it to 2 cups.  I can definitely see how they would taste even better with 5 cups because more chocolate is always a better thing! Enjoy!

I found this on a friend's timeline and had to make these. I pulled back on the sugar and the number of chocolate chips.
Ingredients
  • 1 cup butter
  • 1½ cups white sugar
  • 1½ cups brown sugar
  • 4 eggs
  • 3 teaspoons vanilla
  • 2 teaspoons baking soda
  • 4½ cups flour
  • 1 teaspoon salt
  • 5 cups chocolate chips
  • 2 cups sweetened coconut
  • 2 cups chopped almonds
Instructions
  1. Directions:
  2. Preheat oven to 375. Lightly grease baking sheets.
  3. Combine dry ingredients. Set aside.
  4. Cream butter, sugars, add eggs and vanilla.
  5. Combine dry ingredients and then add chocolate chips, coconut and almonds.
  6. Drop by rounded tablespoonfuls.
  7. Bake for 8-10 minutes.
  8. *** with the temperature at 375 I pulled my cookies out closer to 8 minutes than 10 minutes.
